Some of our favorite family meals are the ones we make so often, I barely need to think about the recipe anymore. These Mediterranean Chicken Bowls are one of those meals. Everyone can build their bowl just the way they like it, piling on grilled chicken, lemon-dill rice, fresh cucumber tomato salad, hummus, tzatziki, and those quick-pickled red onions we always seem to have in the fridge. It’s fresh, filling, and simple enough for a busy school night—the kind of dinner that makes gathering around the table feel easy.

Prep ahead. The quick-pickled red onions, tzatziki, and Greek vinaigrette can all be made ahead and stored in the refrigerator. It makes school-night dinner much easier.

Keep it flexible. Set everything out separately and let everyone build their own bowl. Add more of what you love, leave off what you don’t.

Make extra chicken. Grill a little more than you need and save it for lunch, another bowl, or an easy dinner later in the week.

Store separately. For the best leftovers, keep the rice, chicken, salad, sauces, and toppings in separate containers and assemble when you're ready to eat.

Don't skip the extras. The pickled onions, homemade tzatziki, and Greek vinaigrette are what take simple chicken and rice and make these bowls something we actually look forward to eating again and again.

Everything I use to make this recipe—from the pantry staples I trust to the kitchen tools I reach for every week.

Ceramic Rice Cooker — Makes consistently tender, fluffy rice while freeing you to prepare the rest of the meal.

Mason Jars with Lids — Perfect for mixing, storing, and shaking up homemade dressings and vinaigrettes.

Lemon Squeezer — Makes it easy to add fresh lemon juice to the rice, dressings, and marinades without the seeds.

Glass Prep Containers — Keep the individual bowl components fresh and make packing leftovers for lunch simple.

Jasmine Rice — Rinse the rice under cold water until the water runs mostly clear. This removes excess surface starch and helps the grains cook up light and fluffy.

Chicken Bone Broth — Use it in place of water to cook the rice, adding extra flavor and a little more protein to the meal.

Frozen Jasmine Rice - I usually choose frozen for speed only.

Heather’s Tips

  • Make the extras first. I like to prep the quick-pickled onions, tzatziki, and Greek vinaigrette ahead of time. Once those are waiting in the fridge, dinner comes together so much faster.

  • Double what you’ll use again. Grill extra chicken or make extra rice while you’re already cooking. Both are easy to work into lunches or another dinner later in the week.

  • Keep everything separate. If you’re planning for leftovers, store the components individually rather than assembling extra bowls. The cucumber tomato salad stays fresher, and everyone can build another bowl when they’re ready.

  • Use what you have. These bowls don’t have to look exactly the same every time. Add extra vegetables, swap the rice, or leave something off. That’s part of why they work so well for our family.
